  • 2 tbsp cooking oil

  • 2 carrots, thickly sliced
  • 3 potatoes, cubed
  • 1 cup butternut or pumpkin cubes
  • 200 g mushrooms (optional)
  • 1 can chopped tomatoes
  • 2 tbsp tomato paste
  • 2 cups beef stock
  • 1 tbsp Worcestershire sauce
  • 1 tsp mixed herbs
  • 2 bay leaves
  • Salt and black pepper
  • 1 tsp paprika (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Brown the meat properly
    Heat oil in a heavy pot or Dutch oven. Brown the beef in batches so it gets a deep colour. Remove and set aside.
  2. Build the base flavour
    In the same pot, add onion and cook until soft. Add garlic and cook for 30 seconds.
  3. Add the sauce layer
    Stir in chopped tomatoes, tomato paste, stock, Worcestershire sauce, herbs, bay leaves, paprika, salt, and pepper.
  4. Return the beef
    Add the browned beef back into the pot. Do not stir too much after this point — potjie style is layered.
  5. Layer the vegetables
    Place carrots, potatoes, butternut, and mushrooms on top of the meat — keep them mostly layered rather than mixed.
  6. Slow simmer
    Cover with a tight lid and cook on very low heat for 1½–2 hours. Avoid stirring — just gently shake the pot once or twice if needed.
  7. Final check
